ayurveda
promotes vegetarianism. so in trying to live a more
ayurvedic lifestyle, i've been cutting out meat
entirely.
iIt hasn't been easy. i've slipped a couple of times.
but all in all, I enjoy this way of eating. i feel
better, and my grocery bill has been significantly
reduced! (a nice side benefit in this economy!)
while ayurveda believes that vegetarianism is best,
it does not rule out meat completely. it is thought
that whatever benefits your health the most, and
brings your doshas into balance, is what is best.
but cutting out the meat tends to be far easier
on the digestive system. so many people who follow
an ayurvedic lifestyle are vegetarian.
my biggest challenge in being vegetarian is cooking
foods that my husband will eat! for some of you,
it may be your kids, or even you that prefers a
meaty meal.
so below, you will find a recipe that will fool
even the most devout carnivores.

vegetarian
chili
finally! a vegetarian
dish that even your husband will eat!
in my pursuit of being a vegetarian, i've noticed
my husband grumbling a bit in search of a meaty
dinner.
one night, i made this chili. i said nothing about
it being vegetarian. i simply served the meal, and
said "bon appétit!"
to my surprise, there was not a grumble to be heard!
just to be sure, i served this dish several more
times. (4 times, to be exact). on the fourth go
around, i asked him (after he had eaten) if he noticed
the fact that the chili had no meat in it.
the look of shock was priceless. it looked like
he thought i had poisoned him. he asked in a very
concerned voice, "what the heck" he had
just eaten. when i informed him that the meaty texture
was actually soy, he was absolutely amazed. he had
no idea he wasn't eating meat. and the best part...
it's a "one-pot-meal"! (you can even cook
it in a crock pot if you prefer).
i'd love to get your feedback on this dish. (not
to mention, i'd love to know how your spouse/kids
react to the news of their vegetarian meal!) let

vegetarian chili
ingredients:

of fresh garlic, minced |

onion, chopped |

pepper flakes |

oregano |

28oz can |

tomatoes
(if you don't like the chunks,
use 3 cans tomato sauce. i use both!)

chili
powder |
| 2-3
cups |
|
vegetable
broth |
| 2-3
tbsp |
|
cumin
(depending on how much you like cumin) |
| 2
cans |

pinto
beans (you can also use black or kidney beans) |

texturized
vegetable protein (most health
food stores will have this. the more you use,
the "meatier" your chili will be.)

add
this at the end if your chili is a little
to dry. this is where you will have to find
your balance in the amount of texturized vegetable
protein you use. |
instructions:
sautee the garlic, onion, and pepper flakes in
a large pot, until onion is soft. then stir in
chili powder and cumin. remove from heat.
place all remaining ingredients in the same pot,
and cook until the vegetable protein is soft,
and chili is nice and hot.
serve with sour cream or parmesan cheese.
hint: the texturized vegetable protein is great
in lasagna too!
